Burdock (Arctium lappa) is native to Asia and Europe, but now cultivated in the US. It is used extensively for the following actions and benefits:
Alkalizing – helps balance systemic pH levels and easing inflammation
Alterative - helps cleanse and detox the blood and lymph of impurities
Hepatic and spleen support
Aperient – stimulates digestive function and acts as a gentle laxative
Diuretic - helps flush out impurities (caution here if you are breast feeding or dehydrated)
Prebiotic – helps improve digestion, maintain healthy gut flora & balance blood sugar

As shown in my photo, it can be grated or sliced and added to soups, stews, sauteed vegetables, coleslaw (along with other root vegetables, such as celeriac, beets, parsnips) and roasted root vegetables.
It is also sold as dried, sliced or ground root to be used for tea or in capsules.
Easy to find at health food stores, Asian markets and even in more conventional markets, too.
Give it a try!
