Energy Bliss Bites - no baking required

Ingredients:
1/2 cup nut butter (walnut, pecan or sunflower seed butter or any other nut or seed butter or combination thereof)
1/4 cup extra virgin coconut oil, softened or ghee
1/2 teaspoon vanilla extract (almond or maple extract are also delicious options)
pinch of salt if using unsalted nut butter
3/4 cup oat flour or hemp flour
¾ cup ground flax meal (buy the whole flax seeds and grind them in a coffee grinder)
1 tsp cinnamon or nutmeg (optional)
1 Tbsp of raw, organic honey or maple syrup or
5 drops of stevia liquid. (Available at Greenstar, Wegmans and vitacost in a variety of flavors)
Optional add-ins: coconut flakes, cocoa powder, chia seeds, sunflower seeds, chocolate chips or cacoa nibs (or fermented cacoa nibs)
Directions:
In a medium bowl, mix together nut butter, coconut oil, stevia, vanilla, and salt. Add in the hemp powder and flax seeds gradually, until thoroughly blended. Refrigerate mixture for 30 minutes. To make the balls, scoop out about a tablespoon of dough, press to compact, and then roll into a ball. Repeat with remaining dough. Store in the fridge.
