Sweet Falafel!

I post a lot of recipes with sweet potatoes. They are high in fiber and beta carotene and they're just yummy!
Here's my latest:
Sweet Potato Falafel Burgers
1 ½ cup steamed, mashed sweet potato
1 ½ cup chickpea flour
4 scallions chopped fine
½ cup chopped fresh parsley, cilantro, or mint leaves – or a combination of any of these
½ - 1 teas. ground cumin
½ teas. black pepper
1 teas. sea salt
¼ teas baking soda
½ teas red pepper flakes – optional
¼ teas cayenne powder - optional
2-3 Tbsps. coconut or avocado oil for cooking
Wash the sweet potatoes and then chop them up into approximately, 1” pieces.
Steam them in a steam basket, with a covered pot until soft, 10-15 minutes.
Once the potatoes are soft, strain them and put them in a medium-sized bowl, and mash them with a fork until they are smooth.
Add in the flour, scallions, herbs, salt, baking powder and spices and mix thoroughly.
Roll the batter into 1-2” balls and then flatten them into burgers.
In a large frying pan, heat the oil over medium heat. Place 4 of the burgers into the pan and cook them for 3-4 minutes and then flip them to the other side for 2-3 minutes.
Watch them carefully, so they don't burn.
Place the cooked burgers on a plate lined with paper towel, to soak up excess oil.
Cook the remaining burgers and follow the same procedure. Enjoy these while they are hot, but you can refrigerate or freeze them too.
Serve with hummus and/or babaganoush, lettuce, cucumber, pita or gf bread or crackers.
